you find in a congee shop?
In congee shops, chefs have to start boiling the congee very early, such as
3 o'clock in the morning. This is what makes congee from shops different from
that made at home. After long hours of boiling, rice becomes very soft and
gives the congee a smooth texture.
Congee is usually served with different combinations of ingredients. For example, congee can be served with pork, salted eggs and preserved duck eggs. 'Sampan Congee' is served with squid, fish slices and peanuts etc. Along with congee, fried dough is usually served as well. Two kinds of fried dough are available. One kind is sweet, while the other is salty.
