Why did they appear?
Cart noodles were very popular in the 1950s when Hong Kong's economy was sluggish. With limited purchasing power, people could only afford to eat food that was cheap. By just paying a little, they can enjoy a bowl of noodles with different kinds of delicious ingredients. No wonder cart noodles became so popular! Even until now, cart noodles are still one of the favorites of Hong Kong people. However, cart noodles have only retained its name. Now the noodles are no longer sold in carts, but cooked in restaurants instead. Prices vary because there is a wide variety of ingredients; therefore you can expect some to be very expensive.
