Dai Pai Dongs open in the afternoon, usually till after midnight. People have their lunch, dinner and night snack there. Food is cooked from a greasy wok, and the immediate area looks like one big mess. The seating is usually
temporary, often just a few stools thrown beneath a rain tarp at meal times. Menus are on the wall. The din of Cantonese chatter can reach all-time highs, and you will be amazed how everybody can keep up their own conversations.
