Jin Hua ham is made from of a type of pig called Jin Hua pig. The ham is hard,
dried and marinated, so it has to be steamed briefly before eating. In the
Chinese tradition, Jin Hua ham is a sumptuous food; therefore, most of the
dishes made from Jin Hua ham are special and not usually cooked at home. In
the past, Jin Hua ham could only be eaten by the royal family.
