Comments: Chinese bacon is made from pork belly, and the pork is dry cured
for preservation. Unlike western bacon, the Chinese bacon has a denser and
richer flavour. Similar to Chinese sausages, it is not eaten alone, but is
added to various dishes like turnip cake. It is usually air-dried, when the
north wind is strong, the Chi bacon will have the "fragrance from the
wind". Hong Kong people usually steam the Chinese bacon together with
rice.
