The Chinese like eating preserved food which have depth of flavour. They are air-dried, hard and marinated. The food is usually steamed with rice or used in various recipes. Being good for the soul, they are especially popular in the winter. With its texture and fragrance, preserved food is on a par with fresh food. Four types of preserved food are introduced here, namely, Chinese sausages, Chinese bacon, Jin Hua ham and Chinese preserved duck.
